Abstract
The thesis deals with sustainable consumer behavior in the field of nutrition and with the differences of nutrition patterns within Austria, Germany and the United States of America.
The thesis includes an introduction into the history and the terminology of sustainability, its concepts and principles and into the terminus of consumption. Furthermore, selected theories, which should underpin the sustainable consumer behavior of human beings, are mentioned.
Within the main part, nutrition and it’s sustainability dimensions is described. Second, the effects and trends contrasting (sustainable) nutrition are presented. The next point of this thesis deals with different factors, which influence the daily nutrition patterns of human beings. In order to contribute to a more sustainable nutrition patterns, guidelines for supporting a sustainable nutritional behavior are explained in detail.
The last point includes the differences concerning the trends in die field of nutrition between Austria, Germany and the United States. The selected issues are the current nutrition situation, the determinants of consumption, sustainable guidelines, the (organic) agricultural sector and the consumption of organic and Fairtrade foods are described. As a final point, the countries food policy and food security actions and the current trends of nutritional behavior are explained.
